Grapes: 90% Prugnolo Gentile, 5% Mammolo, 5% Canaiolo

The soil: composition tendentially clayey, mixed with large tuffaceous areas, mostly sterile, with sporadic sand outcrops.

Location of the vineyards: the vineyards are located in Nottola, Argiano and Metina, areas which are considered the most suitable for the production of Vino Nobile. Exposures are optimal and the proximity of Lake Trasimeno guarantees mild winters but not too-dry summers, which allow the vines to have a regular vegetative cycle.

Production notes: the type of cultivation is the “spurred cordon”, with 2.5 x 0.70 m planting density, and maximum grape production per hectare of 7000 kg, according to the production booklet.

Harvesting: Picking of the grapes takes place manually during the first half of October.

Wine-making: it is traditional, with the soft pressing of the grapes, followed by fermentation at controlled temperature, below 28° C, in stainless steel vats, made specifically to obtain delicate tannins and extract the colour.

Aging: after fermentation, the wine remains inside the steel vats until the spring, and then it is placed inside durmast barrels of medium sizes and barriques, where it ages for at least 24 months.

At the eye: intense red ruby colour with burgundy reflexes.

At the nose: it boasts a very delicate but spicy scent, with a light violet fragrance.

At the mouth: excellent body, pulpy, harmonious, savoury, with soft tannins

At the table: fine wine, ideal to accompany red meats, fine game and aged cheeses

To serve:: at 18° C. For perfect tasting, uncork and pour out a bit of wine, at least 1 hour prior to serve it, or oxygenate it in a suitable decanter
