Location of the vineyards: Località Poggio Salvi, Municipality of Sovicille, on a slope facing south/ south-west, which gradually descends from 300 to 250 metres above sea level.
Production notes: the type of cultivation is the “spurred cordon”, with 2.5 x 0.70 m planting density, and maximum grape production per hectare of 7000 kg
Harvesting: Picking of the grapes takes place manually usually in the first week of October
Wine-making: it is traditional, with the soft pressing of the grapes, followed by fermentation at controlled temperature, below 28° C, in stainless steel vats, made specifically to obtain delicate tannins and extract the colour.
Aging: after fermentation, the wine remains inside the steel vats until the spring, then it is placed inside 30-hl barrels made with English oak and barriques, where it ages for approx. 20 months.
At the eye: intense ruby red colour
At the nose: light scents of violet and dry flowers
At the mouth: excellent body, harmonious, savoury, with soft tannins
At the table: it is ideal to accompany typical dishes of the Tuscan cuisine, consisting of meat and aged cheeses
